RECIPE ONE
Mary Murphy’s ICE CREAM DELIGHT – serves 4
Adult supervision always recommended.
This will impress your parents, friends and guests. Great for special occasions including sleepovers!
- 1 pint vanilla Ice Cream (I love using French Vanilla)
- 2 limes (juice them with hand juicer)
- Fresh berries of your choice, peaches or pears.
- 1 bar of chocolate (I like the ones with almonds) Grate carefully with cheese grater. Mind your fingers!
- 1/2 pint heavy cream (whipping cream, not whipped)
Scoop two nice sized dollops of ice cream into a bowl.
Nicely arrange bits of berry/fruit around the edge of the ice cream .
Squeeze about 2 tablespoons of limes juice over the ice cream and fruit .
Pour about 5 tablespoons of un-whipped whipping cream over the above. Sprinkle grated chocolate over all of this.
It looks beautiful, delicious and impressive yet it is very quick and easy to make.
RECIPE TWO
Happy Mouth Apple Crisp – serves 6
Adult supervision always recommended.
- Ingredients 6 Apples (about 6 cups of apple slices) You may need help peeling and coring the apples but I am sure someone can help you since there is a yummy ending to this story.
- 1/4 cup all purpose flour
- 1 ½ cups rolled oats
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon salt ½ cup butter (1 stick),
- softened Whipped cream or ice cream (optional)
You should heat the oven to 375 degrees and lightly butter an 8 or 9-inch baking pan. Arrange the peeled, sliced apples evenly along the bottom of the buttered pan. The dry ingredients can be mixed either in a large bowl, or in a sealable plastic bag. Either way, shake or mix them all together until combined. Cut the softened butter into 1 inch pieces and add to the mixture. Close the bag and knead or squeeze until the mixture holds together. Open the bag and crumble the topping evenly over the apples. Bake for about 40-45 minutes or until the topping is golden brown and you see the edges beginning to bubble. Cool slightly and serve on its own, or with whipped cream or ice cream. Yum.
